  • 1 whole seedless navel orange, washed, quartered, and seeds removed
  • 4 eggs (room temperature)
  • 3/4 cup olive oil
  • 1 1/4 cup granulated sugar
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon sea salt

 

For the Orange Glaze:

  • 1 cup confectioners’ sugar
  • 12 tablespoons orange juice

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 loaf pan or line with parchment paper.

2. Add orange quarters (with peel), eggs, olive oil, sugar, sour cream, and vanilla to blender. Blend until smooth.

3. Add flour, baking powder, and salt. Pulse just until combined; do not overmix.

4. Pour batter into prepared pan and bake for 50–55 minutes, or until a toothpick inserted comes out clean.

5. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

6. Whisk glaze ingredients in a bowl. Once cake is cool, drizzle glaze over top and let set.
