Ingredients
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 cup granulated sugar
- 1 cup butter
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 large egg
Instructions
1. Preheat oven to 350°F. Line baking sheets with parchment paper.
2. In a medium bowl, whisk together flour and baking powder.
3. In a large bowl, cream together butter and sugar until light and fluffy.
4. Add egg, vanilla, and almond extract to butter mixture and mix well.
5. Gradually add dry ingredients and mix just until combined.
6. Form dough into a ball, roll out to 1/4-inch thickness, and cut with stadium-shaped cookie cutters.
7. Chill cut cookies for at least 10 minutes before baking.
8. Bake for 9-11 minutes until edges are barely golden. Cool on pan before transferring to rack.
Notes
- Don’t skip chilling the cookies before baking, this prevents spreading.
- Cookies will continue baking on the hot pan after removal from the oven, so pull them when they look slightly underbaked.
- Store in an airtight container for up to a week or freeze dough for longer storage.
