Ingredients
Base:
- 300g goat cheese, softened (about 10 oz)
- 1 tbsp olive oil
Fig Glaze:
- 1/2 cup fig jam
- 1 tbsp honey
- 1 tbsp balsamic vinegar
Toppings:
- 1/4 cup chopped pecans
- 2–3 sprigs fresh thyme
- Pinch of sea salt
To Serve:
- Crostini or crackers
Instructions
1. Spread softened goat cheese on a shallow dish or plate into an even layer (about ½ inch thick). Drizzle olive oil on top.
2. In a small saucepan, combine fig jam, honey, and balsamic vinegar. Warm over medium heat for 5 minutes, stirring occasionally until glossy and slightly thickened.
3. Let the jam mixture cool for 5 minutes to prevent melting the goat cheese.
4. Drizzle or spread the fig glaze over the goat cheese base.
5. Top with chopped pecans, fresh thyme leaves, and a light sprinkle of sea salt.
6. Serve with crostini or crackers and enjoy immediately.
Notes
Make the fig jam glaze up to a week in advance and store it in the fridge. Use fresh pecans and room-temperature goat cheese for best texture and flavor.
