Description

Heart Jam Cookies are buttery, melt-in-your-mouth shortbread-style cookies filled with raspberry jam and shaped with sweet heart indentations. Perfect for Valentine’s Day or any occasion worth celebrating.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (room temperature)
  • 1/3 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1/2 cup raspberry jam

Instructions

1. Line two 13×9 baking sheets with parchment paper.

2. In a medium bowl, whisk together flour, cornstarch, and salt.

3. In a separate bowl, cream butter with both sugars until light and fluffy.

4. Add egg yolk, vanilla extract, and almond extract to the creamed mixture and mix until combined.

5. Gradually add dry ingredients and mix on low speed until the dough forms.

6. Roll dough into 1-tablespoon-sized balls and place 2 inches apart on baking sheets.

7. Press a heart shape into each cookie using your pinky finger.

8. Chill shaped dough in the freezer for 30 minutes.

9. Preheat oven to 375°F (190°C).

10. Slightly warm the jam and spoon about 1/2 teaspoon into each heart indentation.

11. Bake for 10–12 minutes until edges are golden.

12. Cool on the pan for 5 minutes, then transfer to a wire rack.
