Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar

  • 16 ounces (3 cups) raw whole almonds

Instructions

1. Preheat oven to 250°F and line a large baking sheet with parchment paper.

2. In a large bowl, whisk the egg white and vanilla until frothy.

3. Add granulated sugar, brown sugar, cinnamon, and salt. Stir until combined.

4. Add almonds and stir until fully coated in the mixture.

5. Spread almonds in a single layer on the prepared baking sheet.

6. Roast for 1 hour and 15 minutes, stirring every 20 minutes to prevent burning and ensure even coating.

7. Let almonds cool completely on the baking sheet. Store in an airtight container once fully cooled.
