Description
This Honey BBQ Chicken Rice is a one-pan lifesaver born from a chaotic food truck night, juicy seared chicken, sweet BBQ glaze, fluffy rice, and tender vegetables all simmered together in under 40 minutes.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (frozen or fresh)
- Chopped green onions or parsley, for garnish
Instructions
1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in an oiled skillet over medium heat for 3–4 minutes per side. Set aside.
2. In the same skillet, toast the uncooked rice for 1–2 minutes. Stir in chicken broth, BBQ sauce, and honey. Mix well.
3. Nestle the seared chicken into the rice mixture. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
4. Add vegetables, cover again, and simmer for 5 more minutes. Check that chicken is fully cooked.
5. Remove from heat and let sit covered for 5 minutes. Fluff rice with a fork and garnish with green onions or parsley before serving.
Notes
- Don’t stir rice while it simmers, this keeps the texture light and fluffy.
- Use low-sodium broth and BBQ sauce to reduce salt content.
