Description
A rich, comforting low-carb casserole made with tender chicken, crispy bacon, broccoli, ranch dressing, and gooey cheese, perfect for busy weeknights and meal prep.

- 5 cups broccoli florets
- 8 slices cooked bacon, chopped
- 4 cups cooked chicken, shredded
- 3 cloves garlic, minced
- 1/2 cup shredded mozzarella
- 1/2 cup shredded cheddar
- 1 cup ranch dressing
- 1/2 cup shredded cheddar (for topping)
- 1/2 cup shredded mozzarella (for topping)
Instructions
1. Preheat oven to 375°F (191°C). Blanch broccoli for 1–2 minutes until bright green. Drain well.
2. In a large bowl, mix chicken, broccoli, bacon, garlic, ranch dressing, mozzarella, and cheddar.
3. Transfer to a 9×13 inch casserole dish. Top with remaining cheese.
4. Bake for 15 minutes until top is golden and bubbly.
5. Let rest 5 minutes before serving.
Notes
- Let chicken reach room temperature before assembling.
- For less sodium, use homemade Greek yogurt ranch and turkey bacon.
- Can be assembled ahead and frozen unbaked for up to 3 months.
