Description

Whimsical French macarons filled with lemon-yellow vanilla buttercream and a nostalgic Lucky Charms marshmallow surprise. A perfect marriage of childhood charm and grown-up technique.


Ingredients

  • 1 batch Perfect Macaron shells
  • 12 drops leaf green gel food coloring
  • Gold Wilton glitter stars
  • 452g unsalted butter, room temperature
  • 480g powdered sugar, sifted
  • 2 tbsp heavy cream
  • 1 tbsp vanilla bean paste
  • 4 drops lemon yellow gel food coloring
  • 50 Lucky Charms marshmallows, separated

Instructions

1. Whip butter on medium-high speed in a stand mixer for 5 minutes until pale and fluffy.

2. Add sifted powdered sugar in two stages, mixing 5 minutes between each addition.

3. Scrape bowl and add vanilla bean paste, cream, and yellow gel coloring. Beat again until smooth.

4. Follow your macaron shell recipe, adding green gel coloring to the meringue.

5. Sprinkle gold glitter stars onto piped shells before baking.

6. Pipe yellow buttercream onto bottom shell, press one Lucky Charms marshmallow into center, and sandwich with top shell.

7. Refrigerate macarons for 24 hours before serving to allow texture to develop.
