This Orange Dreamsicle Cake brings back memories of summer with every bite. Moist orange cake layers, fluffy orange cream filling, and luscious cream cheese frosting combine into a dessert that’s both nostalgic and impressive.
Ingredients
For the Cake:
- 2 ½ cups (285g) cake flour
- 1 ½ cups (300g) sugar
- ½ teaspoon (3g) salt
- 2 ½ teaspoon (12g) baking powder
- 1 ½ sticks (169g) unsalted butter, sliced
- 4 large eggs
- ¾ cup (190g) frozen orange juice concentrate, thawed
- ½ cup (121g) milk
- 1 Tablespoon (10g) orange extract
- Zest of 1 orange
- Orange coloring gel (optional)
For the Orange Cream Filling:
- 1 small box (96g) instant vanilla pudding
- 2 cups (464g) heavy cream
- 1 teaspoon (4g) orange extract
For the Orange Cream Cheese Frosting:
- 2 sticks (226g) unsalted butter, softened
- 2 packages (452g) full-fat cream cheese
- 1 teaspoon (4g) clear vanilla extract
- 1 teaspoon (4g) orange extract
- ½ teaspoon (2g) salt (optional)
- 6 to 6 ½ cups (690-747g) powdered sugar
Instructions
1. Preheat oven to 350°F. Grease and flour two 8×2 inch round pans.
2. In a stand mixer, combine flour, sugar, salt, and baking powder. Mix 30 seconds.
3. Add butter slices gradually to the dry mix. Mix until crumbly.
4. Whisk eggs, orange juice concentrate, milk, orange extract, and zest in a separate bowl.
5. Add half the egg mixture to the mixer. Beat on medium speed for 1½ minutes.
6. Scrape bowl. Add remaining egg mix in two parts, mixing 20 seconds after each.
7. Divide batter into pans and bake 25–30 minutes. Cool 10 minutes in pans, then remove.
8. Make filling by whipping pudding mix, cream, and orange extract until thick.
9. Make frosting by beating butter, then gradually adding cream cheese, extracts, and powdered sugar.
10. Assemble cake with layers, filling, and frosting. Chill before serving.
Notes
For added flair, garnish with candied orange peel and mint.
Use gel coloring for vibrant orange layers.
Chill filling before assembling to prevent sliding.
Cake flavor improves after 1 day refrigerated.
