Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Wet Ingredients:
- 1/2 cup unsalted butter, melted
- 3/4 cup raw honey
- 2 large eggs
- 1 cup fresh orange juice
- Zest of 2 oranges
- 1 tbsp grated fresh ginger
Optional Glaze:
2 tbsp honey
2 tbsp orange juice
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour your baking pan.
2. In a bowl, whisk flour, baking soda, ground ginger, cinnamon, nutmeg, and salt until evenly combined.
3. In a separate large bowl, whisk melted butter (not hot), honey, and eggs until smooth.
4. Stir in orange juice, orange zest, and fresh grated ginger.
5. Gradually fold the dry ingredients into the wet mixture. Mix until just combined—do not overmix.
6. Pour batter into prepared pan and bake for 40–45 minutes. Check doneness with a toothpick.
7. For glaze (optional): Mix honey and orange juice and brush over cake while warm.
8. Cool cake in pan for 10 minutes, then transfer to wire rack to finish cooling.
Notes
Use fresh ginger for the best flavor, it’s worth it! Cakes store well in an airtight container for up to 3 days at room temperature. Freeze slices for up to 3 months.
