These Red Velvet Macarons feature rich, cocoa-infused almond meringue shells with a beautiful crimson hue, paired with a creamy mascarpone frosting, an elegant and romantic treat perfect for Valentine’s Day or any celebration.
Ingredients
- 130g powdered sugar
- 120g almond flour
- 7g cocoa powder
- 105g egg whites
- 100g granulated sugar
- 1 tsp vanilla paste
- 1/2 tsp red food gel
- 113g (1/2 cup) cold heavy cream
- 50g (1/4 cup) granulated sugar
- 113g (1/2 cup) cold mascarpone
- 1/2 tsp vanilla paste
Instructions
1. Trace 2-inch heart shapes on parchment paper and place it on a baking tray.
2. Sift powdered sugar, almond flour, and cocoa powder together twice.
3. Heat egg whites and sugar over a double boiler until mixture reaches 120°F.
4. Whip the mixture until soft peaks form, then add vanilla paste and red food gel and whip to stiff peaks.
5. Fold in dry ingredients using macaronage technique until batter flows like thick ribbon.
6. Pipe heart shapes onto baking sheet, tap tray to release air bubbles, and rest 30–40 minutes.
7. Bake at 300°F for 12 minutes until set.
8. Whip mascarpone, cream, sugar, and vanilla until smooth and thick.
9. Pipe filling onto half the shells and sandwich with the remaining ones.
Notes
- Let macarons rest properly before baking or they may crack.
- Do not overwhip the mascarpone frosting, it becomes grainy quickly.
- Use a kitchen scale for best results, macarons require precise measurements.
