Description
This creamy rotisserie chicken broccoli pasta is a quick, comforting weeknight meal made with pantry staples in just 35 minutes. Satisfying, kid-friendly, and loaded with flavor.
Ingredients
- 1 lb penne pasta
- 1 whole rotisserie chicken, shredded
- 4 cups broccoli florets
- 2 tbsp olive oil
- 2 tbsp butter
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup freshly grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. In the last 3 minutes, add broccoli. Reserve 1 cup pasta water, then drain.
2. In a large skillet, heat olive oil and butter over medium heat. Sauté onion for 4-5 minutes. Add garlic and cook 30 seconds more.
3. Stir in heavy cream and chicken broth. Simmer 2-3 minutes.
4. Remove skillet from heat. Stir in Parmesan and mozzarella until smooth. Add Italian seasoning, garlic powder, red pepper flakes, salt, and pepper.
5. Return pasta and broccoli to the skillet. Add shredded rotisserie chicken. Toss to combine.
6. Gradually add reserved pasta water until sauce reaches desired consistency.
7. Serve warm with extra cheese or parsley if desired.
