Ingredients
- 1 sheet of puff pastry, thawed
- 1 cup fresh spinach, chopped
- 4 oz feta cheese, crumbled
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Gently roll out thawed puff pastry and cut into 12 equal squares.
3. In a bowl, mix chopped spinach, crumbled feta, salt, and pepper.
4. Place 1 tablespoon of filling in the center of each square.
5. Fold the corners over the filling and pinch to seal; crimp edges with a fork.
6. Brush each pastry with beaten egg for a golden finish.
7. Bake for 15-20 minutes until puffed and golden brown.
