Description

No-bake St Paddy’s Mint Cheesecake Cups made with crushed Oreos, whipped cream, and a minty green cream cheese filling. Perfect for St. Patrick’s Day!


Ingredients

  • 10+ Oreo Cookies, crushed into crumbs
  • 1 cup heavy cream
  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • 24 drops green food coloring
  • 1 cup mini chocolate chips

Instructions

1. Whip the heavy cream until stiff peaks form. Reserve a portion for topping and chill the rest.

2. Beat softened cream cheese until smooth and lump-free.

3. Add powdered sugar and beat until light and fluffy.

4. Mix in peppermint extract, vanilla extract, and green food coloring until the color is even.

5. Fold in whipped cream and mini chocolate chips gently to preserve the airy texture.

6. Layer cookie crumbs and cheesecake filling in serving glasses, alternating layers.

7. Top with reserved whipped cream and garnish with Oreo, Thin Mint, or Andes mint. Chill 2 hours before serving.
