Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Slice sweet potato into ¼-inch rounds and arrange in a single layer on baking sheet.

3. Roast for 20–25 minutes until tender and caramelized at edges.

4. Meanwhile, mash avocado with lime juice, salt, and pepper in a bowl.

5. Once sweet potatoes are roasted, cool for 5 minutes.

6. Top each round with a generous spoonful of avocado mixture.

7. Garnish with cilantro and red pepper flakes if desired. Serve immediately.
