Buttery, bright, and bursting with citrus flavor, these Vegan Lemon Curd Shortbread Cookies feature a tender shortbread base and tangy vegan lemon curd. Perfect for spring gatherings or tea-time treats.
Ingredients
For the Lemon Curd:
- ⅓ cup canned coconut milk
- ⅓ cup organic cane sugar
- ¼ cup fresh lemon juice (about 1 lemon)
- Zest from 1 lemon
- 1 tablespoon cornstarch
- 1 tablespoon vegan butter
- Pinch of turmeric (optional)
For the Shortbread:
- 1 cup vegan butter (softened)
- ⅔ cup organic powdered sugar
- 2 teaspoons vanilla extract
- 2 cups gluten-free all-purpose flour (or regular flour)
- ¼ teaspoon finely ground salt
Instructions
1. Combine all lemon curd ingredients in a saucepan over medium heat.
2. Whisk constantly for 4–5 minutes until thickened and coats the back of a spoon.
3. Remove from heat and let cool completely.

5. Preheat oven to 350°F and line two baking sheets with parchment.
6. Cream vegan butter until fluffy (2–3 minutes).
7. Add powdered sugar and mix until smooth, then beat in vanilla.
8. Mix in flour and salt until dough forms.

10. Roll dough to ⅛ inch thick and cut 24 cookies using a 2-inch cutter.
11. Cut a small center from 12 cookies for the tops.
12. Place cookies on prepared sheets and bake for 10–12 minutes until edges are golden.

16. Pipe lemon curd onto bottom cookies and sandwich with tops.
